Pomegranates and Persimmons let all Mauiians know Fall is upon us. Fuyu persimmons make a perfect “cracker” to hold some great cheese and pomegranate seed garnish. Beautiful to see and scrumptious to eat.
Be sure to purchase the Fuyu variety of persimmon for this task as they are sweet and firm. They have a flat bottom. The other variety of persimmon, Hachiya, needs to be eaten very ripe when raw or your mouth will be sucked dry with the alkaline nature of this fruit. Hachiya make great steamed persimmon pudding.
Anyway, back to this delicious island themed pupu. I stumbled upon some Koko gouda at Guava, Gouda and Caviar (a glorious cheese shop in the Wailea Gateway Center) that is the perfect foil for this clever easy little snack. The fenugreek studded gouda is also very good on persimmon crackers, too. The butterscotch profile works really well.
