This salad is so pretty and yet easy to pull off. I shop for local heirloom tomatoes and eggplant for this stacked salad. Grill olive oil brushed and salted, thick cut eggplant and red onion. I found some local radishes at Whole Foods Market Maui recently. They not only were so beautiful, I’d like to riff off their colors for a new frock, they were absolutely sublimely delish. Not too spicy and perfect with a touch of sea salt. Talk about summer on a plate!! yowza
